Our Antigua and Barbuda Meal

The Antigua and Barbuda meal consisted of Tropical Curried Chicken Salad on Baguette, Spicy Mango and Avocado Salad, Sparkling Grapefruit Breeze (with coconut rum), and Baked Brown Sugar Bananas. All delicious!

The curried chicken salad had pineapple, raisins, mango chutney, and curry powder. Delicious on a baguette! The spicy mango avocado salad had mango and avocados (of course) mixed with red onion, jalapeño and lime juice. It was fresh with a little kick from the jalapeño – we will definitely make it again!

Sparkling Grapefruit Breeze was grapefruit and pineapple juices mixed with coconut rum, grenadine, lime juice, and Jamaican Ting, a carbonated grapefruit soda that we finally found at Whole Foods. A very refreshing drink that I hope to have in the summer on the deck.

The baked bananas were good except we halved the recipe but didn’t think to half the 151 rum added when lighting the bananas! There was a lot of fire and it didn’t want to go out!

About Antigua and Barbuda

Antigua and Barbuda is the 5th country in what we are now calling the “Gura Global Grub and Armchair Travels”. Antigua and Barbuda is comprised of the two main islands and several smaller islands. It is located where the Caribbean and Atlantic meet and is known for its 365 beaches. Antigua has no rivers but has some beautiful rainforests.

Antigua’s highest peak was named Mount Obama in 2009 to celebrate his presidential win. It was formerly titled Boggy Peak.

We have been thoroughly enjoying our “armchair travels”, so we decided to set up the green screen we use for our Halloween parties and virtually visit Antigua. It was fun to put on our beachwear and pretend we were on the beach.

We originally planned to visit Antiqua in 2021, but travel restrictions were still too strict. We ended up visiting Antigua as part of a Caribbean Cruise in 2022.
