Our Barbados Meal

Our Barbados meal consisted of Sweet Potato Fish Cakes, Bajan Peas N’ Rice, Spiked Coconut Water and Bajan Christmas Puddin’ (Pound Cake with Cherries). The fish cakes were tasty when topped with the ketchup, hot sauce and honey sauce. The authentic version in Barbados would most likely be made using flying fish. The Spiked Coconut water was just coconut water with coconut rum and lime. Very refreshing. The Christmas Puddin had 4 sticks of butter in it. So very rich and delicious with a few cherries throughout to add flavor. Another cake that was delicious for breakfast the next day. πŸ™‚

About Barbados

Barbados is a small island. You can drive the perimeter in an hour. It is considered to be the birthplace of rum. The island does not have volcanos and because of its location does not get hit by most hurricanes. People who live in Barbados are called Bajan and they speak Bajan which is local dialect of English. Barbados has the highest percentage of centurions in the world along with Japan.

Our Dream Barbados Vacation

Barbados looks beautiful and we hope to visit some day soon. A couple weeks ago I looked in to going there for our wedding anniversary in June, really just daydreaming. At that time according to VisitBarbados.org you had to get tested before your flight, once you landed and then had to go to a designated hotel for 5 to 7 days to wait for test results. I looked today and starting May 8th if you are fully vaccinated you need to get tested 3 days before your flight and once you land and only have to wait a day or two before you can enjoy your vacation. We are getting closer to being able to doing some international travel! For now we will stick to cooking international meals.

The new bullion Silver coin issued in 2019 by the country of Barbados features their national symbol, the flying fish.
