Our El Salvador Meal
Our meal from El Salvador was Cheese and Black Bean Pupusa, Cabbage Slaw (Curtido), Atol (corn drink) and Maria Luisa (Salvadoran Layer Cake). We had some difficulty making the pupusas, but they were tasty with the black beans and queso cheese. The coleslaw had a kick to it thanks to the red pepper flakes. We didn’t use the recommended half teaspoon, but instead sprinkled just a tiny bit, which made it spicy enough for us. The drink reminded us of sweet cream corn. I enjoyed it more than Rob did, but I’m not sure we would make it again. I had some issues with the cake batter due to my lack of baking experience. When I added the cold egg to the softened butter, the butter clumped up and the batter looked gross. I decided to throw it in the pan and bake it anyways and luckily it came out great! The thin layers of cake with the marmalade in between were delicious, delivering a very strong orange flavor from the orange marmalade, zest, and juice in the cake mix.

About El Salvador
El Salvador, meaning “The Savior,” is the smallest country in Central America, the only Central American country that does not have a Caribbean coastline. Despite its size, it has a rich history and diverse landscapes. The Ruta de las Flores is a scenic route that winds through colorful towns, flower fields, and beautiful waterfalls..
Even though small, El Salvador has 20 volcanos! Every major city in the country is situated near a volcano, many of which have erupted within the last century, sometimes multiple times. El Salvador is on the Cocos Tectonic Plate, making it prone to both volcanic eruptions and earthquakes. Because of this, the capital, San Salvador, experiences significant destruction twice and severe damage three times in the 1900s. Despite these challenges, El Salvador remains a vibrant and densely populated country.
The country is has a lot of ancient history, with Mayan ruins such as Tazumal and San Andrés. Joya de Cerén, often referred to as the “Pompeii of the Americas,” is a well-preserved pre-Hispanic farming village. Cuco Beach looks on the Pacific Ocean looks beautiful.
